Stuffed Potato

This stuffed potato will be a family favourite! Simple ingredients and easily customisable to your taste and calorie requirements. Whilst this can act as a base recipe, there are 100's of different toppings you could add.

  • 145g Spud lite potato

  • 140g (raw) Chicken breast

  • 50g Black beans (Edgell)

  • 50g Aussie corn kernals (Edgell)

  • 50g Cherry tomatoes,

  • 5g Red onion

  • 50g Avocado

  • Fresh lemon juice (1/2 lemon)

  • Fresh coriander

  • 1 tsp Smokey paprika

  • 30g Smokey chipotle salsa

  • 1/2 Fresh chilli

  • 0.5 tsp Olive oil


  • Preheat oven to 200 degrees. Rinse potatoes, & poke with a fork. Cook in foil for 50-60 min.

  • Place chicken in a pot and pour boiling water on top to poach for 20-30 min.

  • Pour black beans and the liquid into a small pot & cook. After 15 min add fresh coriander, stir then leave to reduce.

  • Strain your corn kernels & cook on a low heat with oil and smokey paprikaShred cooked chicken in a bowl and add 15g of smokey chipotle salsa.

  • Add chopped cherry tomatoes, red onion and fresh coriander into a bowl for salsa.

  • Mix avo, lemon juice fresh chilli and salsa for guac

  • Cut your potato down the middle and add toppings
