Seafood Pasta Salad

This one is a real winner! Super tasty, can be eaten warm or cold and easy to prepare in bulk.

INGREDIENTS


  • ¾ Cup high protein pasta (i.e Rotini)

  • 100g Prawns

  • Cherry tomatoes

  • Zucchini

  • 50g Canned corn

  • 50g Frozen peas

  • Basil leaves

  • A squeeze of lime

  • Salt and pepper


METHOD


  • Bring water to boil and cook pasta

  • Fry prawns and add frozen peas soon after

  • When prawns are almost done add tomatoes, corn, basil and zucchini to heat

  • Once cooked, remove from pan and add a squeeze of lime

  • Season with salt and pepper
