Protein Packed Sweet DijonPork & Quinoa

The name says it all! Protein packed and delicious.




INGREDITENTS


  • 200g Meat pork tenderloin

  • 1 apple, diced

  • 1 onion, chopped

  • ½ cup mango, diced

  • 2 tbsp Dijon mustard

  • 1 tbsp honey

  • ⅓ cup water

  • 2 cups cooked quinoa


METHOD


  • Mix together Dijon mustard, honey and water

  • Heat a non-stick skillet over medium heat

  • Add onion and cook for 2-3 minutes

  • Add pork and sauté for another 2-3 minutes

  • Add in apple, mango, and Dijon mustard mix

  • Sauté until apple is tender and pork is cooked through

  • Serve over quinoa for a complete meal
