INGREDITENTS
200g Meat pork tenderloin
1 apple, diced
1 onion, chopped
½ cup mango, diced
2 tbsp Dijon mustard
1 tbsp honey
⅓ cup water
2 cups cooked quinoa
METHOD
Mix together Dijon mustard, honey and water
Heat a non-stick skillet over medium heat
Add onion and cook for 2-3 minutes
Add pork and sauté for another 2-3 minutes
Add in apple, mango, and Dijon mustard mix
Sauté until apple is tender and pork is cooked through
Serve over quinoa for a complete meal
